It depends on how you define "our area", but I'll take a shot at both.

Flattest: Katy (Houston) Flatland Century. http://www.northwestcyclingclub.com/index.php/rides-and-events/club-rides/katy

Hilliest: Tour das Hugel. This is not pay ride, they just accept donations. I recorded over 10,000 feet of climbing in 110 miles, it hits every named Smiley

climb in the Austin area, a lot of them are at 15%+, with a few evil ones hitting 25% (Smokey Valley to Ladera Norte is probably the hardest 1/2 mile I've ever ridden). If it happens, it is either the 2nd or 3rd weekend in November (usually you will find groups riding it both weekends).

I also hear the Peach Pedal is hilly if they send riders up The Wall... Here's a tip on the Aledo ride--on the long route, at teh bottom of every good hill is a stop sign and a blind 90deg turn, either left or right, so you get to carry ZERO speed off of the hill.

For really flat rides you'd have to go down to Houston, there are several pay rides around Houston

Humble Lion's Pride
Manvel Ride to the Rescue
Manvel Great Escape
Missouri City Education Expedition
Bike around the Bay <-- My favorite
Tour de Houston

Then you can go west around Katy, they have 7 or 8 that are excellent and fairly flat

Just checked the Garmin site - looks like Muenster German Fest (http://connect.garmin.com/activity/305455365) is the hilliest pay ride I have done. Recorded 2,093 (51.0 ft per mile) on the 41 mile course. Just a few feet above the Wild Ride on it's 65 mile course.

For reference Hotter'n Hell 2010 100 mile route I had 1,690 (16.9 ft per mile) http://connect.garmin.com/activity/46698721

Thanks everyone, I was just trying to get an idea of what is considered hilly and what is thought of as flat. Watching the Tour de France always makes me want to do more hills because my usual rides are flat as a board.

I try to climb by spinning more, but lately I find that I'm using more muscle to get to the top. I don't want to hurt my knees, so I want to work on my technique.

The GDB Lancaster Rally (2nd weekend in April) isn't TOO hilly... but there's a 4+ mile stretch along Sugar Ridge Road that definitely is, from mile 15-19, and there's a hilly section after Palmer, as well... You'll get your exercise, but it's nothing like Goatneck or other rallies down around Austin or Cleburne.

Hotter 'n Hell is definitely one of the flatter ones around...

If you are living in NRH now there are several places nearby that you can get some hill work in, look at my strava routes. Easily get 2-3k in 40 mile rides, while its not much the climbs are pretty good and some good rollers.
