That can't be it says "we have lost most of the smooth asphalt that we have enjoyed for the past 3 years, the pavement quality and scenery are still very enjoyable. " right on the home page  Smiley
 
My dad sure would like the tour de pepper though.

There are lots of feed lots in that area (IIRC from the Mineral Wells 600k), I think I'd rather deal with Collin Country roads.
 
Besides which, if you train on crappy roads, you'll be faster on smooth ones  Grin
