Alexis and I have lots of recipes for whole food items for the trail, or just as healthy snack alternatives.  I'll post others from time to time.
 
 
Peanut Butter Balls                                    Yields 46 1" balls
 
1 c peanut butter
2 c honey
1 c quick oats
1 c chopped dried mixed fruit
2 c wheat germ
chopped peanuts or almonds - finely chopped is better
 
In large bowl combine all ingredients except chopped nuts.  You may need to heat the peanut butter and honey for about 10 seconds in the microwave to make them easier to incorporate.
 
Shape the mixture into 1" balls and roll in chopped nuts.  Store in an airtight container

This one I've meant to give to Bud and Rose for a while..
 
Refrigerator Bran Muffins                        Makes quarts, keeps in fridge for weeks
 
15 oz (7 cups) Kellogg’s Raisin Bran                  5 t soda
4 c flour                                    4 egg substitutes
1 c All-Bran cereal                              1 qt non-fat buttermilk
2 c sugar                                    1 c canola oil
 
Combine dry ingredients in a large bowl.  Add wet ingredients and stir until just moistened.  Cover and store in refrigerator until ready to bake, as long as 5-6 weeks.  Bake at 375* for 20 minutes.
 
 
 
Current alteration:
15 oz bran flakes
1 c white flour
2 c wheat flour
1 c whole rolled oats
1 c flax seeds
½ c Splenda
1/2 c light brown sugar (packed)
2 c raisins                                    
5 t soda
4 eggs
5 ½ c buttermilk
1 c oil

Thanks Gregg n Alexis for sharring.  I cant wait to make them muffins.  I really like the Peanut Butter Ball Recipes too!!  YUMMY

This were so good!!!!!!!  Thank You for sharing this!!  Everytime I see Bud eating some....I gotta have some too!!
