Everybody hates having to start up on an incline, even if you've downshifted ahead of time -- especially high BB position riders (most Bacchetta-ites   ;)  ).  Peter Noris mentioned a specific recommendation on the Rando discussion group that I use myself, for the "wobble-afflicted" among us:

<<OTOH, once I learned the hard way about starting a high bottom bracket bike
going up hill (be in a low gear, don't worry about clipping the other pedal
until you're going and stable
) no more problems -

Also, relax your grip -- if you're pulling on the handlebars, you're more than likely causing yourself to turn, contributing to the unbalancing...

Note that these are ALSO valid practices for the relative "noob" when just doing startups on flat ground!

I like to make every start a "no tense" situation.  It's almost all I ever use the granny for anymore.
